Well in regards to taste alone, Feta has a more pronounced, sharp taste while provolone is a bit on the milder side. Feta is great on salads and some main courses, I enjoy a little feta in my alfredo sauce it gives it a really nice salty zip and much more flavor than parmesan. Provolone I like for sandwiches or sometimes to add another layer of flavor to my lasagna.Provolone, hands down!for a sandwich--Provolone
for a salad-FetaI LOVE provolone and use it on everything YUM!well it depends on what your using it on... they both taste real goodThey are 2 different types of cheese , It depends when you want to serve them and with what , I find Feta good for an addition to salad or to make Greek dishes like Spanakopita to eat on its own I rather have Provolone cheese Auricchio to be more specific you can serve it with grapes it's a bit salty but so is the Feta Cheese . They also have mild Provolone in Italy is the Auricchio if you look perhaps you could find it in the stores that you shop

better as a sandwich cheese with some roast beefprovolone is a great salty cheese for sandwiches while feta is great crumbled on salads or cooked food
